Ingredients:

1 small head of green leaf lettuce
4 boneless, skinless chicken breasts
juice of 1 lemon
1 tbsp. oil
1 tbsp. freshly chopped tarragon
salt and pepper to taste
vinaigrette salad dressing to taste

Directions:

1.Wash and dry the lettuce. Tear into small pieces and set aside.
2.Slice chicken breasts into strips and then cut strips into small pieces.
3.Heat oil in a medium-sized pan, add the chicken, and cook for 4 to 5 minutes until the chicken is lightly browned.
4.Add lemon juice, tarragon, and salt and pepper to taste. Cook for another 4 to 5 minutes until chicken is tender.
5.Toss the lettuce with the vinaigrette dressing. Add chicken, lemon, and tarragon mixture and toss.
6.Serve immediately.

Curried Chicken Salad

Ingredients:

2 chicken breast halves, cooked and chopped or shredded
1/4 cup finely chopped celery
4 green onions, thinly sliced
2 tablespoons chopped walnuts
2 tablespoons chopped dried cranberries
1 Granny Smith apple, shredded
5 to 7 tablespoons mayonnaise, or to taste
1 teaspoon curry powder, or to taste
1 tablespoon chopped fresh parsley, optional
salt and pepper, to taste
Preparation:

In a bowl, combine the chopped chicken, chopped celery, green onion, walnuts, cranberries, and apple. Toss to blend. Stir in the mayonnaise, curry powder, and parsley, if using. Add more mayonnaise, as needed, and season to taste with salt and pepper.

The grill with, cooking spray and preheat for 5 minutes. Grill the chicken for 5-7 minutes. Cool and cut into small cubes. In a large salad bowl, combine the chicken, grapes, celery, onion and walnuts. Mix together the mayonnaise, mustard, salt, pepper and juice to make a dressing. Pour over the chicken salad and toss lightly .
